Shrimp Tossed in Noodles & Spicy Peanut Sauce #sikandalouscuisine
Spicy Peanut Sauce Recipe adapted from Epicurious
The star of this dish is the peanut sauce - with those brilliant flavors in it you cant go wrong . Use this sauce with noodles , on satay , stir fry shrimp , fish or even mushrooms. Adjust sweet , sour and chilies as per taste .
2 Tablespoons Vegetable Oil - I used Sesame oil.
Scallions / Spring Onions - C
Cloves - Chopped
Tablespoon Grated Ginger.
Cup Soy Sauce - Adjust .
Tamarind Pulp - Adjust.
Tablespoons Brown Sugar - Adjust
3 Tablespoon #Veeb Chili Garlic Sauce. Finely Sliced Red Chili- Optional
1. Heat oil stir fry onions , garlic and ginger until fragrant - maybe one minute then add all other ingredient , bring to a rolling boil , simmer for 5-6 minutes till sauce thicken . You can adjust all flavors even after you have made the sauce . It's that simple and forgiving.
Sauce may be made up to 3 days ahead and chilled, covered. If sauce is too thick after chilling, stir in 1 to 2 tablespoons hot water until sauce reaches desired consistency.
Spicy Peanut Sauce Shrimp Noodles : 6 Large Prawns , retain the tails. Noodles - Enough for two servings , boil as per pack. 1 Cup Vegetables of choice - I used sliced baby corn , grated carrots , sliced mushrooms. Suggested Garnish : Roasted Peanuts. Chopped Spring Onions. Fried Garlic. Basil Leaves.
1. Heat oil in a wok , stir fry prawns for a minute , add the vegetables , stir fry another minute.
2. Add 1/2 cup Spicy Peanut Sauce , on high heat cook another minute , toss in the noodles , cook a minute or two , adjust the amount of Spicy Peanut Sauce at this stage. 3. By now prawns will be cooked , vegetable still crunchy and everything well coated with Spicy Peanut Sauce ! Garnish and dig in ! Super yum !
