Idiyappam & Vegetable Istew

Have been fascinated by these string hoppers / idiyappam & stew for the longest period of time - never got around to plucking up the courage to try either . Fate had plans in place for me . Friend Roma Patel was so sweetly insisting on sending me an idiyappam maker while I dilly dallied . Matters were bought to a head when one fine day Veenu Chopra also a member friend messaged me to get it collected from her house ! Now there was no escaping making them - and am glad for that as I have discovered endless delicious possibilities .

Vegetable Stew

2 Mugs Coconut Milk

2 Potatoes - Boil and cube.
15 Beans - String & cut to desired size.
6 Small Aubergines - Cut lengthwise into four pieces.
2-3 Drumsticks - Peeled and cut to desired size .
10 Sambar Onions - Peeled and left whole
20 Thin Cloves Garlic - Peel and leave whole - thick ones slice into two .
1/2 Raw Mango - Slice / chop in small fingers.
Use whatever vegetables you have at hand.

Make Paste :
1/2 Coconut
6-8 Green Chilies.
10 Methi Seeds.
1/2 Teaspoon Jeera.
1 Teaspoon Mustard Seed.
Again innovate !
Make a paste of the items listed under paste and set aside.

Boil potatoes , when they are 75 % done , add the beans and drumsticks and 10 seconds later strain the lot - set aside.
Heat oil , splutter mustard seeds , add dried red chilies and curry putta. Next add whole garlic and sambar onions, fry till they begin to change color , next add the paste , bhuno 1 minute and add aubergines .When Aubergines are half done add the boiled vegetables , salt - slowly cook , keep adding coconut milk , simmering till vegetables are cooked .Adjust flavors and thickness of gravy to taste . Eat with steaming hot idiyappams !
