Jeera Alu - Chilka Wala

These were a favorite as a kid . I was fascinated by ' baby ' alus' . Originally marble sized potatoes were used and used whole , unpeeled and uncut . Now a days one doesnt get them that tiny , so each potato is washed , left unpeeled , cut into two and then cooked.
Heat some ghee in a wok . when hot add jeera and dried red chilies .When they change color add 1/2 teaspoon garlic paste , and almost immediately add the potatoes .mix well , add salt and cook covered .Stir occasionally .Cook till nicely done - slightly browned.Sprinkle amchoor when ready to serve. They dont look very exciting but taste divine - I think I like amchoor all over again !
