      Alu Aur Sahijan Pati Ki Bhaji
( Potatoes With Drumstick Leaves )
According to ancient Ayurveda Drum Stick leaves will cure almost 300 types of diseases. That's a good enough reason to eat them I guess , more so as they are delicious and aromatic too - give a slight tangy flavor to the dish. I am happy that I have put these for these nutritious  leaves to good use - in the wok !

500 Grams Potatoes.
1 Medium Onion Minced.
1 Teaspoon Rai.
2 Cups Packed Drumstick Leaves.
Dried Red Chilies

Separate leaves , wash and set aside to drain.
Boil potatoes , peel and cube.
Heat 1 tablespoon oil in a wok , add rai , once they stop spluttering add onions and dried red chilies.
When onions turn limp , add potatoes and salt. Toss to cook for 5 -7 minute then add leaves .
Mix well , and cook covered on low for 5 minutes for flavors to merge.
Simple and delicious.
