Cranberry Cake

Cranberry Cake

Set oven at 170C , bake aprox 1 hour .

A classic English cake recipe with cranberries and a hint of lemon .

200 Grams Flour
1 Heaped Teaspoon Baking Powder.
175 Grams Butter.
175 Grams Castor Sugar.
3 Eggs.
1/2 Teaspoon Vanilla Essence .
Zest of One Lemon.
Fist full and More Cranberries .

Cream the butter and sugar . Add eggs one at a time . Stir in flour , if the mixture is too thick add some milk . The mixture should be thick but pourable.Lastly add in all other ingredients , mix well and bake for an hour - check by inserting a skewer in the middle.
Remove from the mold after 10-15 minute and slice when totally cool.
You can make the cakes with other fruits / nuts or even just as a lemon cake .
