Seyal Gosht

   Seyal Gosht
( Sindhi Recipe )

This slow cooked mutton is a Sindhi specialty from Maharashtra .The mutton is cooked without adding water which is what Seyal means . Slow cooking is the key word here . This is my adaption after reading many confusing recipes !

750 Grams Lamb - Cut to desired size pieces .
4  Onions Pureed.
200 Grams Thick Curd.
4 Tomatoes Pureed.
2 Tablespoons Garlic Paste.
1 Tablespoon Ginger Paste.
1 Cup Coriander Leaves + 4 Green Chilies - Pureed.
1.5 Teaspoons Garam Masala.
1/2 Teaspoon Green Cardamon Powdered.
1/2 Teaspoon Ajwain Powder.
1 Teaspoon Jeera Powder.
2 Tablespoon Dhania Powder.

Marinate the mutton in a mixture of the ginger ,garlic , coriander leaves paste along with the curd , for a few hours or overnight .
In 2 Tablespoon ghee lightly saute the onions till they weep , then add the tomatoes and all the masalas ,saute 3-5 minutes , cool and add all this to the marinated mutton .
Set aside for an hour.Cook covered over high heat for about 10 minutes to seal the mutton , then reduce heat and simmer covered  for about an hour till mutton is nice and tender.
You could also bake the dish , tightly sealed in the oven for and hour at 160C.
This dish normally has a thick gravy .
