Methi Machhi

Methi machhi

500 Grams Fish marinated in 1/2 teaspoon turmeric , salt , 1 Teaspoon each ginger and garlic paste , juice of 1/2 a lemon .An hour later mix in 1 Tablespoon cornflour and fry the fish lightly , drain and set aside.
Next :
1 Teaspoon Minced Ginger.
1 Teaspoon Minced Garlic .
1 Teaspoon Jeera Powder.
1 Cup Methi Leaves ( salt , set aside 15 minutes , squeeze , wash and squeeze all water out again .Coarsely chop .)
1/3d to 1/2 Cup Chopped Dhania Leaves.
Some Mint Leaves ( optional )
Chili Powder / Whole Red Chilies
1 1/2 to 2 Tomatoes chopped.

In oil add the ginger garlic , cook a minute , add methi dhania and mint leaves along with all spice. Cook covered 2-3 minutes on low till well blended .Next add the tomatoes , further cook ( covered on low heat ) 12-15 minutes adding about 1 cup of water .Cook till tomatoes are soft and ingredients well blended and you have very little liquid left - at this stage you can adjust flavors . Add the fish, cook covered over low for another 2 minutes .
Serve with hot rice.
