Fish Cooked In Milk

 ( Fish Cooked In Milk )

This is a very interesting recipe I got from Boria Majumdar 's ' Cooking On Th Run ' - a story of his trials and triumphs in the kitchen . The book isn't just a recipe book , it's semi autobiographic , very witty and has simple concise and doable recipes that call for nothing that you wouldn't already have in the kitchen .

The best thing I like about his recipes is that you don't need too many kitchen skills as he walks you through the recipe with ease .

250 Grams of preferred fish ( cut to desired size )
1/2 Teaspoon Haldi Powder.
2 Tablespoon Mustard Oil + 1 Teaspoon ( the teaspoon is my addition at the end )
1 Cup Milk.
1.2 Teaspoon Fennel seeds ( I used powder )
1/2 Teaspoon of Kilonji Seeds.
1/3 Teaspoon Methi Seeds.
4 Green Chilies ( 2 chopped thick , 2 whole with a slit )
Coriander Leaves.

Add 1 tablespoon of mustard oil to the milk , also add the chopped green chilies. Set aside .
Take another tablespoon of Mustard Oil , heat it up in a wok , splutter the seeds , add the whole green chili , salt and haldi.Once you can smell the spice ( 30 seconds ? ) add the fish . Fry fish till almost done - 3-4 minutes then add the milk and 2 green chilies . Bring to a boil , and simmer another 2-3 minutes. Adjust salt and garnish with coriander leaves.
I add a teaspoon of raw mustard oil to most mustard based dishes just while serving - takes the flavors to a higher level !
Serve with rice.
