Mom's Paneer

Mom's Paneer .

So named as it's always made for my mom when she comes over for lunch . Devoid of spice , it has a delicious sweet and tangy flavor and takes no time to cook.

500 Grams Paneer
4 -5 Large Red Tomatoes Pureed .
1 Teaspoon Minced Garlic .
1 1/2 Teaspoons Rai.
Curry Putta.
2-3 Tablespoons Sugar .
Juice Of One Lemon ( if needed add at the very end )

Cube the paneer . I always leave it aside for an hour for the water to strain out .
Crackle the rai , add garlic and curry putta , a minute later the tomato puree . Cook covered on low heat 5 minutes to cook the tomato . Add a splash of water if needed . Add sugar and salt , blend all flavors in then add the paneer. Cook another 2-3 minutes covered. Adjust flavors and add lemon juice if needed .
Same recipe works beautifully with fish too .
