Simple light and delicious , paneer ki bhujia is comfort food for me . No fixed ingredients , just keep it simple and let the fresh ingredients do their job.
Crumble 500 Grams Paneer , leave in a strainer 15-20 minutes for the water to run . Don't squeeze .
I used 1 Red Pepper chopped ( as in the pic ) along with 1/2 an onion chopped similarly . Keep a cup or more chopped Hara Dhania handy - the more the better . Some green chilies as per taste .
In a bit of oil / ghee saute the peppers and onions till they brgin to get a bit limp , then throw in all the dhania leaves along with some chopped / whole green chilies.Cook covered for 1 minute for the dhania leaves to warm up release their delicious aroma . Now add the paneer and salt , mix well and cook covered for another 2-3 minutes to infuse the paneer with all the flavors . A hot roti is ideal with this delectable paneer dish .
Replace tomatoes with peppers if need be.
