Trim the bhindis from both end , make a slit lengthwise in each and fill with a masaala of your choice . I used a bit of amchoor , red chili powder and salt . MIxed it all together and then lightly filled each with a tiny spoon - just about a pinch in each bhindi.
The sambar onions - pull out a bit of the center taking care not to break them , fill the same masaala .
In an open nonstick stir fry bhindis and onions together till done . They must retain their bite !
