Tortilla da Patata or potato omelet , is probably one of the most popular dishes served in Spanish home and tapas cafes all over Spain . Just about anything can go into it . It is very simple to make .The only thing you need to keep in mind is that it cooks over very low heat , I take the easy way out by baking it in the oven and not in a frying pan.
2 Potatoes Peeled & Cut Into Medium Thin Discs.
1 Large Onion Diced.
I used some red pepper ( diced ) and chopped green chilies too . You can use just about anything you fancy / have handy at home waiting to be used up !
In a bit of olive oil crackle the pepper and add potatoes , onions , peppers and green chilies. Cook on low heat till potatoes are almost done . Cool .
Whisk the eggs - don't over whisk , add seasoning and the cooked vegetables . Pour it all into a baking dish and bake at 150C for 15 minutes or till done .
If you are using a frying pan cook covered over very low heat . When it firms up , cover the pan with a plate and turn the pan onto the plate . The flip side of the egg will now be on the plate - which you slide back into the pan to cook the other side ! Use the oven , its simpler !
Excellent as a one meal dish or as finger food when cut into wedges / strips .
