Shiitake Mushrooms With Noodles

Considered a symbol of longevity in Asia because of their health-promoting properties, shiitake mushrooms have been used medicinally by the Chinese for more than 6,000 years. Shiitake Mushrooms are a good source of non-animal food source of iron. Known to help fight cancer by building up the immune system , these mushrooms are also great for the heart . All this and great to eat too !

This is another super fast recipe - a great one meal dish which I am sure you will enjoy .

8-10 Dried Shiitake Mushrooms .
1 Tablespoon Minced Garlic .
1 Tablespoon Light Soy Sauce .
1 Tablespoon Hoisin Sauce .
1-2 Teaspoons Fish Oil
Freshly Crushed Black pepper ( to taste ).
A few Minced Sun Dried Tomatoes .
Chili Flakes ( To suit your taste buds ).
1 Tablespoon Sesame Oil.

Soak the mushrooms in warm water for 30 minutes or so . They will expand and become fleshy . Cut them into large chunks / strips , squeeze dry and set aside .

Meanwhile take a proportionate amount of noodles and boil them till done - al dente .

While the noodles are boiling heat the oil in a wok , when hot add the mushroom , black pepper . Cook for 30 seconds and add the mushrooms along with the sauces and other ingredient . Cook covered for a two minutes on low heat .Taste and adjust the flavors . Remember the noodles have to go into this so the flavors must be strong .

When noodles are done , drain well and stir into the mushrooms , cook a minute or so just to coat the noodles with all flavors . Taste , adjust and enjoy a wonderful hearty one dish meal made in a jiffy ! These shiitake mushrooms impart a beautiful smokey flavor into the noodles !
