This is a super easy recipe .
3 Ounces Cooking Chocolate .
3 Ounces Butter ( aprox 100 grams )
2 Tablespoons Olive Oil .
8 Ounces Sugar ( 72 grams ) - NOT Castor sugar .
1/2 Teaspoon Baking Powder .
2 Whole Eggs .
1/2 Teaspoon Vanilla Essence .
Pinch of Salt
4 Ounces Flour ( 144 grams )
2 tablespoons Dark Cocoa Powder .
1/2 A Cup Walnuts ( coarsely pounded NOT done fine )
8 X 8 " Non stick baking dish buttered and lightly dusted with flour
In a double boiler melt chocolate butter and oil . When almost done add cocoa powder and sugar - by using granulated sugar you get a nice crunchy taste .
Cool down the mixture and add the beaten eggs constantly stirring to blend all in . Next add the vanilla , salt , walnuts . Now sift in the flour . The mixture is lumpy , which is fine . Place into the dish and bake in a preheated oven @ 175 C for 25 minutes .
Cool , cut to desired sizes .
Don't over bake as the brownies will dry up .
The walnuts are left largish as you get a nice chew on them ( ! ) , though you cant cut those perfect pretty looking pastry shop squares !
