Baked Potato Mushroom and Leek

A hearty main vegetarian baked dish , this recipe uses dried Shiitake mushrooms for their smoky flavor and a meaty texture .

6 Large Potatoes par boiled , cooled and cut into 1/4" discs , or even broken into not too small chunks.
1 cup Leek or Green Onion , chopped thick along with some of the green part .

1/2 Cup Dried Shiitake Mushroom , soaked in hot water for about 20 minutes or until they expand and are soft and fleshy . Then roughly tear them up . Drain and set aside .

Some grated Parmesan and 1/3 the quantity of grated Mozzarella cheese - be generous with the Parmesan , use as per your taste .

1 Tablespoon of fresh Tarragon , washed and it's long tapered leaves torn into half . If not available use Sweet Basil leaves .

1/2 cup not too sweet White Wine , if not available use water with a tablespoon of Balsamic vinegar .

100 Ml Cream .

In about 5 tablespoons of Olive Oil ( I use extra virgin for most stuff ) heat up the tarragon until you start to get its anise like aroma . Take off the fire and set aside for 10 minutes . That way the tarragon will infuse the oil well with it's magical sweet aroma .

After 10 minutes reheat the oil along with the tarragon in it and add the leek / green onion , the mushrooms and freshly ground black pepper along with salt . Stir fry for about 2-3 minutes , then add 1/2 cup white wine . Cover and simmer 5-7 minutes till onions are soft .

Now line the base of an oven proof greased dish with the potatoes . Crumble some bits to cover all gaps . It can look messy and that's okay ! Now sprinkle some cheese evenly . Cover the potato base with all of the cooked leek / mushrooms and pour whatever liquid remains onto the potatoes . Sprinkle more cheese onto the top of the leek / mushroom layer . Cover leek / mushrooms with the rest of the potatoes . Pour the cream all over the top layer , add more cheese . Cover with a foil .
Bake 15 minutes at 210C .

When ready to serve , bake uncovered ubder maximum heat to lightly brown the top.
This dish is magic .

Approximately 2-3 tablespoons of both the cheeses will be sprinkled each time cheese is called for . The sharper the Parmesan , the better the taste .
