Chicken Ghee Roast #sikandalouscuisine
Prima Kurien you are the ultimate star and Mallu Cuisine Diva ! Your Chicken Ghee Roast recipe was a smashing hit - for the first time my Nepali Bhutwa ( Mutton ) was ignored while my guests polished off this delicious chicken ! Here is the recipe shared by Prima - make it blindly guys .
I went with boneless chicken - I mostly use thigh pieces . Boneless isnt ideal , but at a party I think ladies dont like being seen all dressed up and holding a chicken leg while they go at it ! Jokes apart , its convenient to eat too unless seated at a table.
500 Grams Boneless Chicken.
3-4 Tablespoons Ghee.
4-5 Shallots sliced.
1 Heaped Teaspoon Ginger Minced- Not in recipe.
1 Heaped Teaspoon Garlic Minced- Not in recipe.
Lots of Curry Leaves.
Fried Onions For Garnish - Optional.
Make a coarse mixture after lightly roasting :
1 Teaspoon Khus Khus.
1 Teaspoon Sauf.
1 Star Anise.
2 Tablespoon Dhania Seeds.
1 Tablespoon Degi Mirchi Powder.
1 Heaped Teaspoon Ginger Paste.
1 Heaped Tablespoon Garlic Paste.
1 Tablespoon Black Peppercorn.
1 Teaspoon Jeera - Not in recipe.
5 Green Cardamom.
5-7 Shallots Roasted.
1 Tablespoon Thick Imli Paste-
Make a paste of the above - I avoided using water or curd as some recipes use as Prima didn't use it - I simply added 1 tablespoon oil to get it all going.Marinate the chicken in the above for 1 hour .
Heat ghee - lots of ghee is better , this is after all a ghee roast so dont hold back. When hot add in some torn curry leaves and then shallots , minced ginger and garlic . Once they soften add in the marinating chicken . Sear well on high for 6-7 minutes , lower heat , cover tightly and cook 20-25 minutes on low or till done.
After searing I baked my chicken tightly sealed at 150C for 40 minutes and while serving garnished it with fried onions.This was one of the best chickens I have eaten !
