Kaddu Aur Lobia Ki Phali #sikandalouscuisine


Please note - This isnt Oolan - just an inspiration ....

This recipe was inspired by Latha Subramaniam's Oolan post . She mentioned Lobia Beans and I mistook that for Lobia ki Phali which are fresh lobia beans ! To add to the confusion her pic had a green chili on top which looked like a lobia ki phali too ! Now in the midst of all this confusion a beautiful and delicious dish was born , and I thank Latha for that .

1 Kg Green Pumpkin - Unpeeled and cubed.
200 Grams Lobia ki Phali - Cut into under 1" pieces.
8-10 Green Chilies - Slit or cut.
2 Cups Thin Coconut Milk.
1 Cup Thick Coconut Milk.
Cold Pressed Virgin Coconut Oil.
Curry Leaves.

1. Heat oil , saute kaddu , curry leaves and chilies for 5 minutes , then add salt and lobia ki phali . Cook another 3-4 minutes , now add the thin coconut milk and cook till kaddu is soft.
2. Take off heat adding the thick coconut milk and some dhania greens  , gently stir it all- don't cook any more . Sprinkle some coconut oil on top and eat this delicious disg with steaming hot rice . We all loved this.
