I was luck to be gifted two beautiful Wagamama Cookbooks recently - just reading the one on noodles got me all inspired and raring to get cooking something from the book . This recipe calls for Soba Noodles , I didnt have them handy but had a big packet of frozen large prawns from #lionfresh waiting to be used so I used the spaghetti at hand to a toss up a delicious bowlful of happiness. Mushrooms here are my addition.
150 Grams Noodles.
1 Teaspoon Toasted Sesame Oil.
2 Tablespoons Rice Vinegar.
1 Tablespoon Soya Sauce.
2 Teaspoons Brown Sugar.
1 Heaped Tablespoon Veeba Chili Garlic Paste.
250 Grams Large Prawns - Chop.
2 Spring Onions - Slice Thin.
1/2 " Ginger Chopped.
10 Cloves Garlic - Slice.
4 Shiitake Mushrooms.
6-7 Large Button Mushrooms - Slice.
2 Tablespoons Oil.
1 Tablespoon Chopped Dhania Greens.
1 Soak Shiitake Mushrooms in water for 2 hours , they will expand and get soft. Rinse well , cut to size.
2. Boil Pasta as per package instructions , drain , and toss with sesame oil . Set aside.
3. Make a chili mixture of Vinegar , chili paste , sugar and soya sauce.
4. Heat oil , add garlic and ginger and 20 seconds later add the mushrooms. Cook 30 seconds , add prawns and spring onions. Cook 2 minutes.
5. Add in the chili mixture , cook another minute , now add noodles , toss them around to evenly coat and pick up all flavors.Scatter chopped cilantro , and take off heat .
A bowlful of deliciousness tossed in no time !
