A friend was coming for lunch and asked for Kadhi Paneer . I surfed the net , came up with Tarla Dalal's recipe which I used with some adaptions . A super dish this turned out to be .
500 Grams Paneer (cottage cheese) , cut into 1 inch cubes
oil for deep-frying
1 Teaspoon Coriander (dhania) Seeds , dry roasted and crushed
1 Teaspoon Ginger Paste
5 Tomatoes - Chop 3 , puree 2 Tomatoes
1 1/2 t Teaspoon Chilli Powder
1/4 Cups Cream
1 Teaspoon Kasuri Methi
Salt to taste
1/4 Teaspoon Cardamom Powder
1/4 Teaspoon Garam Masala
Chopped Coriander (dhania) for the garnish
2 Tablespoon Ghee.
Heat the oil in a deep non- stick kadhai and fry the paneer cubes for 3 to 4 minute and plunge paneer into warm water for 15 minutes. Drain again and keep aside.Heat the ghee in a kadhai, add the coriander seeds and sauté for half a minute.Add the ginger paste and sauté for another minute.Tip in the tomatoes along with salt and cook covered on low while stirring occasionally till oil separates.
Add the chilli powder and kasoori methi simmer for 2 minutes.Add the paneer, cardamom powder,garam masala and cook for 4-5 minutes. Now add 1 cup water to make gravy , adjust seasoning , top with cream and garnish with coriander leaves.
