Mutton Tari #sikandalouscuisine



500 Grams Mutton
1 Teaspoon Black Pepper corn.
1" Cinnamon.
1/2 Teaspoon Shahi Jeera.
4 Green Cardamon.
2 Black Cardamon .
6-8 Cloves.
1 Tej Putta.
2 Star Anise .
1 Large Onion Chopped - Fried brown , remove from oil and puree - Set aside.
1 Large Onion Chopped.
1 Teaspoon Ginger Paste.
1 Teaspoon Garlic Paste.
1 Tablespoon Dhania Powder
3 Tomato-  Puree .
Chile to taste.
Salt.
Ghee

Heat Ghee , add all the whole spice , when they emit that bouquet of warm flavors add chopped onion and fry till brown .Now add mutton and over high heat sear for 7-10 minutes , reduce heat and cook covered adding a splash of water if needed.

When mutton is half done , add the onion paste along with all other ingredients .Cook covered till done , adjusting the amount of gravy you would like to have by adding water accordingly
​I make this tari thin.​

Try avoid using a pressure cooker if possible - slow cooking brings out the flavors beautifully.For that magical touch , add 1 tablespoon of hot ghee over the dish when ready to serve .
