Beetroot Raita - Beetroot Thayir Pachadi
from Sumeet Nair's The Bangla Table this gem of a share is a must
make.I have made it a couple of times and now got the flavors to suit my
palate.I share the original recipe and in brackets my changes ) . Do
try this - it's amazing .
2 Teaspoons Black Mustard Seeds ( I used three to get more of a punch )
2 Green Chilies ( Not in original recipe )
400 Grams Beetroot Peeled & Grated.
2 Teaspoons Sugar ( I don't use any now as I find the beet sweet enough )
500 Grams Yogurt
Whisk ogurt and keep aside to chill.
Grind mustard seeds with green chilies then add the paste with salt and sugar to grated beets , mix gently.
Add yogurt to the beet mixture , gently stir in , and set to chill for about 30 minutes before serving.
