Idiyappam ( String Hoppers )
1 Cup Rice Flour
1.5 Cups Water.
1/2 Teaspoon Salt
1 Tablespoon OIl
boiling water add salt and the oil . Turn the heat off and stir in the
flour .You will soon have a soft but firm dough .Wrap the dough in cling
film , and allow to rest for 10-15 minutes.
Grease your idyappam maker , make a roll , feed in the dough ,
don't press to compact it . Spin out the idyappams and steam fro 10
minutes .To steam I place them on an idli mould in a pressure cooker
without the whistle.
