COORG PORK SPECIAL RECIPE

COORG PORK SPECIAL RECIPE
Ingredients:
Pork - 1 KG
Red chilly powder - 1 tsp
Turmeric powder - ½  tsp

Salt to tast
Lemon  medium sized - 2
Onions medium sized -  4

Ginger - 10 gm

Garlic  whole - 1

Green chillies - 7-8

Coriander leaves - ½ bunch
Pork Masala Powder - 25 gm or 2 tbsp
Procedure:  1) Wash and drain medium cut pork. Add turmeric powder, salt, red chilly powder and marinate for about 30 minutes.
2) Grind coarsely sliced onions, ginger, garlic, green chillies, coriander leaves together.
3) Put the marinated pork in a thick bottomed vessel, add ground paste, mix well and cook in medium heat till soft. Then add the Pork Masala Powder, 2 tsp lemon juice (can be added later too) or ½ tsp kachampuli (local coorgi vinegar) and cook for 5 to 10 minutes.
Serve with sannas or idlis. Tastes best with coorgi rice roti and kadambuttu (rice dumpling).
