My Halwa Cake



I have to thank Chandana Maity who posted a Cheese Cake from Odhisa not long ago . That recipe got me thinking and was the foundation for this inspiration .

This is a fun cake - you can play with the ingredients and go ' andaaz say ' (approximates) for most of it . This is also a pure vegetarian cake as we use no eggs here.The cake is moist ,light and delicious. I associate this cake with what I would find in a shop/bakery in our hill stations up North .

Set Oven 180C         Bake 40 Minutes

1/2 Coconut - Grated fine.
500 Grams Paneer.
200 Ml Orange Juice - I used tetra pack along with 8 tablespoons sugar , boiled it down to half .
8-9 Tablespoons Suji.
2 Tablespoons Ghee.
1 Teaspoon Baking Powder.
2/3d Cup Assorted Chopped Nuts.

Crumble paneer - ensure there is no water , gently knead in the ghee , coconut and suji - dont make it a paste or your cake will remain a halwa !
Add the reduced and sweetened orange juice , mix well and adjust sugar by tasting the mixture- I kept adding castor sugar.Lastly fold in all assorted and chopped nuts and raisins. Note you aren't adding the baking powder as yet .The reason being that baking powder begins to react the moment it comes in contact with liquid - and at this stage you arent ready to bake your cake as you are waiting to glaze the surface !

To get the brown glazing spread ghee/oil on the bottom of you baking dish . Sprinkle sugar , place in the oven till it caramelizes . At this stage mix the baking powder into the batter and pour the batter into the baking dish onto the criminalized sugar.Set to bake for 40 minutes till done.When done remove from oven , 20-30 minutes later invert onto your serving platter and tuck in !
