750 Grams Mutton - Assorted cuts.
3 Potatoes - Peeled and cut to size
1 Tablespoon Ginger Paste.
1 Tablespoon Garlic Paste.
3 Tablespoon Thick Curd.
1/2 Teaspoon Mace Powder.
3-4 Tablespoon Mustard Oil.
Marinate the mutton in the above for a couple of hours .
2 Onions Sliced .
2 Onions - Make paste.
1 Teaspoon Each Ginger & garlic Paste.
Assorted Whole Garam Masalas.
Heat mustard oil , add whole garam masalas - when they emit that nice aroma add sliced onions , cook till light brown , now add the onion paste and ginger garlic paste and cook till oil separates and onions are nicely brown .Add the mutton and cook on high to seal the meat . Add salt to taste.Cook covered adding a bit of water - essentially allow mutton to slowly cook , the gravy will turn a nice dark color.
When mutton is 90% done , add potatoes , bhuno well for 5 minutes , then add 2 Cups hot water and cook till mutton and potatoes are fully cooked.Just before serving stir in some raw mustard oil ( Optional ).This delicious mutton potato curry has very little gravy.
