Watermelon Rind Salad



Watermelon - delicious red and juicy , an ideal fruit for summer. We carefully cut away the red flesh while discarding the rind ( white part ) has which actually is loaded with vitamins, nutrients and antioxidants - all that goes into the trash ! Here is a delicious and healthy alternative.

After you are done with eating a watermelon , peel away the tough green skin and cut the rind/membrane into fingers - set aside.

Make a dressing using :
1 Tomato Pureed.
1 Teaspoon Minced Garlic.
1 Teaspoon Minced Green Chilies .
1 Teaspoon Rai Seeds.
Curry Leaves.
Salt.

Splutter rai in minimum oil , add curry leaves garlic and pureed tomato and salt , cook on sim covered . After 1 minute the tomato will be 75% done . Now take the wok off the heat , stir in the rind fingers and bingo - you have this beautiful and delicious salad waiting to be eaten !
