500 Grams Sole ( Cut to desired size )
Apply some salt and haldi powder on the fish .After 30 minutes stir fry 2-3 minutes to seal , set aside , while you make the gravy:
500 Grams Tomatoes.
1 Teaspoon Garlic Paste.
1 Teaspoon Ginger Paste.
1" Cinnamon Stick.
2-3 Black Cardamons.
5-7 Black Peppercorn.
1 Teaspoon Jeera Powder ( mix in while serving ).
Curry Putta ( Optional ).
1 Bay leaf.
Dried Red Chilies.
1 Tablespoon Cream ( Optional )
Puree tomatoes and strain . Heat ghee , when hot remove from heat , add all the whole spice and curry leaves , return to heat , when they emit their warm aroma - 30-40 seconds , add the tomato puree and all the rest apart from cream. Cook till oil separates. Add some water if you need more gravy , bring to a gentle boil. Add the fish , cook another 3-4 minutes till done.Sprinkle jeera powder, mix and tweak flavors , add cream if desired or maybe some lemon juice , or both !
Use the same recipe for paneer - both versions are delicious !
