1 Cup Toor dal
1 Teaspoon Sambar Powder.
Wash dal and soak an hour .Pressure cook the dai in the above , only one whistle- set aside to cool down.
Meanwhile take a mixed bag of vegetables , baingan , shallots , drumsticks ( stringed ) carrots , beans - go with what available . Wash and chop to size.
In 100 Ml oil splutter 1 teaspoon mustard seeds and 1/2 teaspoon methi seeds . Agg whole dried red chilies , curry putta and hing.
Next add all the vegetables , cook covered till almost done.Now add 1 Tablespoon sambar powder , mix well add freshly extracted imli paste to desired taste .Also add 1/2 teaspoon sugar.Blend flavors- 1 minute and mix into the dal.Add water to get the desired thickness , cook a few minutes and adjust flavors .
The actual sambar is darker than the picture on top of the page shows due to the plating.
