Kairi Rice

Kairi Rice

In celebration of mango people !

I read this recipe in BBC GoodFood and here is my take on it with a few twists .

500 Grams Boiled Rice.
1 Teaspoon Mustard Seeds.
10 Dried Red Chilies.
1/2 Tablespoon Urad Dal
1/2Tablespoon Channa Dal.
5 Green Chilies ( Paste ).
1 Onion Chopped.
Haldi
Hing
Salt
Green Dhania Chopped.
Curry Putta.
1 Mango - Grate half and slice the other half.
1 + 1 Tablespoons Grated Coconut.
A Fistful Of Raisins ( or more ! )

In a bit of ghee add mustard seeds , curry leaves and dried red chilies , peanuts , the dals . Saute till dals color- say a minute . Now add the onion , hing , chili paste , salt , 1 tablespoon grated coconut and haldi.Saute another minute or two - nothing should brown ! Stir in rice along with the balance ingredients , mix well .Cover and leave on low heat just for 30 seconds for coconut and mango to warm up and release their flavors .

Take off heat . Let the rice stand covered 10-15 minutes . Lightly mix , adjust seasoning and garnish the some green dhania and sliced mango strips.
Serve at room temperature - A winner on your table !
