Asparagus Kosambari


Salad Ingredients :
1 Cup Grated Coconut ( Grate through the biggest hole in the grater ) .
500 Grams Asparagus ( Peel , cut 1.5 " )
8 Tomatoes ( Seeds removed , cut long and thin ) .
2/3d Cup Moong Dal ( Soaked in cold water with salt , 2 - 3 hours ) .
Fistful Green Coriander ( Roughly chopped ) .
2-3 Green Chilies ( Or more , minced ) .
Juice of 2 Lemons ( Adjust ) .
Salt .
The Chownk:
1 1/2 Teaspoon Rai.
1/8th Teaspoon HIng.
2 Tablespoon Refined Oil .
5-6 Red Chiles .
2-3 Sprigs Curry Putta.

Keep icy cold water in a bowl handy . In boiling hot water add 1/2 teaspoon sugar , and add asparagus . Blanch for no more than 20 seconds , drain and put to cool off in the chilled bath . This also prevents further cooking .10 minutes later drain and set aside.
Drain the water from the daal , and lightly mix all the salad ingredients .
In hot oil prepare the chownk by spluttering rai , hing , curry leaves and red chiles , toss 30 to a minute seconds and incorporate into the mixed salad . Taste and adjust flavors .The sum total is fresh and delicious
