Alu Chutt Patay



4 Large Potatoes ( Boil ,peel and cube the potatoes ).
Dot Of Hing.
2-3 Green Chilies.
1/2 Teaspoon Garlic Paste.
Juice of 2 Lemons.
1/2 Teaspoon rai Powder.
1/2 Haldi Powder.
1.5 Teaspoons Red Chili Powder.
1 Teaspoon Salt.
1 Tablespoon Oil

Heat oil , no prizes for guessing which one I used ! Add Green chilies ,hing and almost immediately add the garlic along with all the powders. As we are using very little oil also add 4 tablespoons of water to the garlic/spice and cook covered on low heat for 2-3 minutes till garlic looses that raw smell.
Toss the potatoes in the garlic mixture cook on high heat for a minute , then reduce heat , add lemon juice , gentle mix well , cover and cook another 2 minutes or so.These potatoes come out nice and light , and taste divine hot or cold , I eat them cold .
