Paneer With Peppers

This is a delightfully delicious recipe , the touch of fresh mint at the end makes it very special .

500 Grams Paneer.
1 Red Pepper.
1 Green Pepper.
1 Large Onion.
1 Large Tomato ( optional ).
3-4 While Red / Green Chilies ( optional ).
Salt.
Red Chili Powder ( depends if you are using the whole chilies or not ).
1/2 Teaspoon Garlic Paste.
1/2 Teaspoon Jeera.
8-10 Whole Mint Leaves ( fresh ones , and this is optional )

Cut paneer and vegetables in half size fingers . Heat 30 Ml oil / ghee , when hot splitter jeera and also add the whole chilies . Next add garlic paste . Cook 20-30 seconds and add all the vegetables , salt and red chili powder.Cover and cook over low heat 3-4 minutes till the time the peppers begin to soften but still have a bite. Add paneer , increase heat , gently mix all , cook covered 2 minutes , open lid , dry out the water the paneer will leave. At the end , add Pudina leaves , mix , cover and take off the heat ! A wonderful and colorful dish !
Note - I like to leave the cubed paneer in a strainer/colander for a while for the water to drain out .
