Fish Stir fried With Greens & Sesame Seeds
This is a quick and easy recipe , no fixed ingredients as such , go with whats available at hand.Substitute fish with prawns pork or chicken , this is also great with tofu or paneer .
250 Grams Fillet of Sole - Cut to size and marinate the fish in garlic paste , soy sauce , crushed black pepper for about 30 minutes
Florets of Broccoli
Celery Sticks - Peeled and cut to 1"
Leek - Cleaned & Cut
1 Tablespoon Minced Garlic
Light Soy Sauce
2 Tablespoons Roasted Sesame Seeds
The vegetables here are just suggestions , use mushrooms or whatever you fancy .
Blanche vegetables for 10-15 seconds in boiling water to which 1 teaspoon of sugar has been added . The sugar retains the green color in the greens.Strain and plunge into a chilled bath to end cooking.Dont over cook , you want them crunchy .
In a wok heat some sesame oil , add 1 tablespoon of minced garlic , add fish , stir fry one minute , when nearly done add the rest of the vegetables , a bit of salt / soy for seasoning , cook another minute till fish is done and the vegetables have picked up the flavors , sprinkle with sesame seeds and serve at once !
