Mutton Pepper Fry

This recipe is from a brilliant cookbook titled 'The Suriani Kitchen' , by  Lathika George where she shares recipes of the Syrian Christians of Kerala .This dish is specially delicious according to the author when coconut oil is used . This was my first attempt at cooking with coconut oil and I loved the results ! A cautionary note is that coconut oil and the onions add a dash of sweetness to the dish.

( A ) Lightly roast 3 -4 green Cardamons ,3-4 Cloves  and a 1" Stick of Cinnamon , grind to a fine powder and set aside to use later.
( B ) Boil 500 grams Mutton in 4 cups of water with :2 Tablespoons Coriander Powder , 1 Teaspoon Chili Powder.and 1/2 Teaspoon Haldi Powder. Add Salt .Boil till mutton in almost done and you are left with just about 1/4 cup liquid.
( C ) While the mutton is boiling heat the oil fry:
3 Onions sliced , when they turn soft add 3 Tomatoes ( cut into 8 pieces ) , 3 tablespoons crushed garlic and 12 curry leaves.Fry for about 2 minutes
Next add 2 tablespoons crushed peppercorn and the mutton.Also add the ground spice -step (A).
Bhuno 4-5 minutes till spice blend in . Aromatic and delicious !
