500 Grams Paneer- cut in cubes.
1 Kg Baby Spinach.
1 Stick Cinnamon & 2 Black Cardamon.
1/2 Teaspoon Cumin Seeds.
7-10 Cloves Garlic - minced.
1" Ginger - cut in fine Julienne.
2 Tomatoes Pureed.
2 Green Chilies - minced.
2-3 Tablespoons chopped Green Coriander.
In water to which 1 teaspoon sugar has been added blanch the spinach for a minute , cool and grind to a paste.
Heat ghee/oil , add cinnamon and cardamon , when they emit that warm aroma add cumin , and almost immediately add the garlic and ginger . Cook 30 seconds or so and add the minced chilies and tomato puree. When oil separates , add the spinach and cook over low till oil separates . At this stage introduce the paneer , cook another 2-3 minutes .
When ready to serve , heat the palak paneer , add the chopped coriander ( don't sprinkle on top ! ) , mix in gently to infuse it's delicious and subtle flavors into the dish .
