This is a simple no fuss method with great results .
I Cup Rice
Juice and some Zest of Lemons.
Soak rice 30 minutes in water , boil till rice is cooked , strain and spread. Extract lemon juic and add to rice with zest and salt . Check flavor . Let rice rest like this for 30 minutes or till ready to serve , thats when you add chownk:
1 Teaspoon Mustard seeds.
Whole Red Chilies.
1 Teaspoon Turmeric Powder.
Heat oil , crackle mustard seeds throw in red chilies and curry leaves , as they change color remove from heat , add turmeric and 2 tablespoons water , return to heat , stir in the rice , blend lightly , taste and adjust flavors .
Serve with curd and some chutney/pickle .
