Pavlova roulade with apricot and grape mascarpone



Have egg whites? Make pavlova ,or something a little fancier, make a pavlova roulade .This is a stunning dessert of soft, white, fluffy meringue rolled up and filled with fresh grapes and jams - the end result - delicious !
Preheat oven to 180 C
Meringue
4 Eggs ( whites only )
1 Tablespoon Rose Water
1 Teaspoon Red / White Wine Vinegar
1 Teaspoon Cornflour,
175-200Grams Caster Sugar

The Filling
200 Grams Mascarpone
1 Tablespoon Castor Sugar
1 Tablespoon Rose Water
100 ml Cream, lightly whipped
3 Tablespoons Apricot Sugar free Jam/Pulp ( use any fruit jam/pulp)
1 Cup Green Grapes ( cut into two )

To decorate dust with Castor sugar.
For the fruits and pulp go with your taste and with whats available at hand.
Line a 6"X12" ( aprox ) baking dish with greased foil , cover the sides too .





The Meringue:
Beat 4 egg whits until soft peaks form . Then add the rose water cornflour and wine vinegar in one go . Start whisking at maximum speed adding the sugar gradually . In 5 minutes you will have stiff peaks .Gently spoon the meringue onto the pan , spread evenly and bake for about 20 minutes - it should now be light brown and firm to touch.

When done take out of the oven , allow the meringue to cool for five minutes, then turn out onto a sheet of foil (slightly bigger than the roulade) – quickly turning it upside down onto the sheet and gently removing the foil on the base. Allow to cool completely.

For the filling:
lightly beat the mascarpone cheese in a mixing bowl, then add the caster sugar and the rosewater . Fold in the cream and fruit jam/pulp and the grapes.I used sugar free jam to keep the dessert healthy and not too sweet .Spread the cream evenly over the meringue ,then holding the foil closest to you, roll up the roulade away from you and leave it in the foil until you are ready to serve (it will hold neatly here for a couple of hours in the fridge)

When ready to serve, unwrap the roulade and plate it . Dust with icing sugar and cut some of it into 2: thick wheels .Decorate the platter with leftover grapes if any !
