Fish In Orange Ginger Reduction ( With Basil )

The Orange Ginger Reduction

200 Ml Orange Juice.
1 teaspoon Minced Ginger.
1 Tablespoon Sesame Oil
1 Tablespoon Light Soy Sauce.
3 Tablespoons Fresh Chopped Sweet Basil
1 to 1 1/2 Teaspoons Sugar
Juice of 1/2 A Lemon
Crushed Black Pepper To taste

Warm the oil ,add ginger and pepper, saute one minute ,add all ingredients but the basil leaves . Reduce to a third , add the basil , cover and take off flame . Don't open for 30 minutes allowing the flavors to infuse and marry . Now taste and adjust flavors for tanginess .

Take 4 Fillets of sole .Marinade in 1 teaspoon garlic paste ,  a bit of oil and salt for about 15 minutes. Lightly dust with flour and  pan fry the fish . 

When cooked , plate the fish and spoon over the sauce .
This is a delicious tangy basil infused dish .
