Fish Salad in White Wine
( With Vegetables )Check if the fish is done and remove the fish from the stock . Increase heat and reduce the stock to about half .
This is an ideal dish to make when you have two odd fillet of fish which wont be enough for the family - or perhaps when you wish to serve a non vegetarian salad . This recipe also takes care of that now not drinkable 1/4 bottle of white wine that's been lying open in your fridge for a while !
200-300 Grams Fish Fillet .
( Cut your fish into 2" thick fingers ).
The Stock :
120 Ml Dry White Wine .
60 Ml Water.
2 Tablespoons Minced Garlic.
Salt & Seasoning To Taste
Add the vegetables to the reduced stock and cook covered 2-3 minutes till soft yet crunchy firm . Now reintroduce the fish to the pan with the vegetables , and cook covered 30 seconds or so to marry all flavors . Leave covered till cool . Adjust flavors and serve warm at room temperature or cooler as a salad .
