Red & Yellow Pepper Soup

A wonderful combination of tangy taste and crunchy texture, sweet bell peppers are the Christmas ornaments of the vegetable world !


In this recipe we broil or grill the peppers to enhance and extract maximum flavors from these beautiful vegetables .Broiled peppers have this distinct smokey sweet flavor which makes this soup so special . These very peppers broiled are often used in salad , flavoring the salad with their sweet smokey juices . 

When broiling peppers do not make the mistake of plunging them into chilled water as is often suggested .Cool the blackened peppers and seal them in plastic bags for about 15 minutes . You will then be able to peel off the charred skins without loosing their juices . If a tiny bit of charred skin remain , it's good as it adds to the flavor , but only a small bit !

Ingredients 
2 Red Bell Peppers.
1 Yellow Bell Pepper.
1 Tomato ( roughly chopped ).
2 Cloves Garlic.
1 Green Chili ( remove seeds )
1 Medium Onion Chopped.
1 Litre Vegetable Stock (or 3-4 Maggie Cubes .) **
Salt & Freshly Pounded Black Pepper.
1 Tablespoon Olive Oil.
50 Ml Cream.
A Sprig Of Rosemary ( if possible )

Heat the oven and oil the peppers . Next place them in a baking dish broil them under high heat regularly turning them to blacken them evenly . 

When done , remove from the dish , cool slightly and seal the peppers in a plastic bag for 15 minutes . 

Take them out and peel them .Next on a plate cut them , saving the juices that flow and discard the seeds. Chop roughly .

In a saucepan  heat oil , add minced garlic and black peppers , stir 30 seconds and add the onions . Cook another minute till onions are translucent then add the chopped tomatoes , green chili and the peppers . Stir fry for another minute and add 1 cup stock and simmer covered for 15 minutes . Cool and liquidize .

Return liquidized peppers to the saucepan , add rosemary , salt and the balance stock . Cook another 15 minutes.

When ready to serve discard rosemary , and stir in the cream . Adjust flavors and enjoy a delicious soup bursting with flavors and color !

You may serve this soup chilled or hot .

**  If you are using cubes cook with water and add cubes towards the last
