Watermelon ( Matira ) Salad



Watermelon eaten as never before !

1/2 A Large ( football size ? ) Watermelon - peeled , seeded and chopped into chunks - use only the pink flesh .
3 Tablespoons Lemon Juice.
1 1/2 Teaspoons Salt .
1 to 2 Tablespoons Sugar - depending on the sweetness of the watermelon.
1 to 2 Tablespoons Red Chili Powder - depending upon your taste .
2 Teaspoons Rai / Fine Red Mustard Seeds .
2-3 Dots of Hing ( Asafoetida )
1 1/2 Teaspoons Minced Garlic - adds a fantastic flavor to the watermelon .

To make the ' dressing :Take 5-7 chunks of the chopped watermelon and squish to pulp* .
Next take 1 tablespoon oil , when smoking hot throw in the hing /Asafoetida and 20 seconds later the Rai / mustard seeds.
Splutter seeds for 20 seconds then add the *watermelon pulp along with the sugar , salt . chili powder garlic and lemon juice and 1/2 cup water . Cook on low heat covered for a minute .
Cool this ' dressing ' down , and when cool taste and a
djust flavors, then stir in / onto the watermelon . Serve chilled
.This salad should have a strong sweet tangy and chili taste .
