Chicken with Peppers in Pesto sauce


Chicken with Peppers in Pesto sauce .

500 grams boneless chicken cut in 2 inch cubes - use thigh meat as it's tender .
2 teaspoons garlic paste.
2 Red / yellow ( or both ) pepper cut in inch size cubes.
10 or so sweet basil leaves to garnish.
1 - 1 1/2 tablespoons pesto sauce. ( Fresh or any good bottled product )
2 tablespoons Olive oil.
Salt and pepper to taste .

Marinade the chicken cubes in garlic , salt and pepper for an hour or longer . Keep salt low as the pesto sauce is salty too .
In a wok stir fry the chicken over high heat till it changes color - about 3 minutes , add 2-3 tablespoons water and then simmer covered for another 10 minutes .
Chicken should be nearly done . Now add the peppers and pesto sauce . Mix well , cook another minute covered and turn off the heat .Leave the lid on the wok so that the peppers get a bit limp but remain firm .When ready to serve tear and sprinkle the basil leaves over the dish .
Any pasta of your choice woks well with this recipe .
