Stir Fried Fish with Bacon

Stir Fried Fish with Bacon

700 grams fish fillet cubed into 3" pieces which were marinated in 2 teaspoons of garlic paste , salt , pepper and olive oil .
Keep salt low as you are using bacon which will also add to the salt content in the flavor.
Approximately 150 grams of bacon which was chopped into 2" size pieces .
In a bit of olive oil stir fry the bacon , when cooked remove from the wok retaining the bacon ( melted ) fat in which you stir fry the fish . All of 5-7 minutes .

Next par boil greens in water to which one teaspoon of sugar has been added . ( to retain that beautiful green color ) . Don't over boil , the vegetables should be crunchy .( No fixed ingredients - use whatever greens like broccoli / beans , asparagus you have at hand.)
Take out of water and set aside .

When ready to eat , heat up the fish with bacon , when steaming hot stir in the vegetables .

The bacon flavours enhance the taste of this dish so use as much as you would like to . However adjust the salt as bacon is very salty !

You end up with a great tasting and colorful dish .
