Steamed Date Pudding
Steamed Date Cake / Pudding
This is the ultimate cake , enjoy !
250 Grams seeded and chopped dates soaked in 6 tablespoons of dark rum for 4-6 hours or over night .
The weight is AFTER seeds have been removed .
170 Grams Butter .
110 Grams Castor Sugar .
6 Eggs .
400 Grams White Bread chopped .( Half a loaf )
1/2 Teaspoon of Cinnamon powder .
1/2 Teaspoon Cooking Soda .
In a food processor make bread crumbs out of the bread , and set aside .
Next take all other ingredients and process them into a coarse paste .
Mix the bread and the paste well .
Butter a mould , pour in the mixture , SEAL WELL with foil so that NO moisture can get in .
Place mold in a bigger pan of water , the mould not touching the bottom and water just about touching the mould . Cover the larger pan and steam over medium heat for 3 1/2 hours .
Unmould and serve warm .
The cake or pudding is moist and light .
You have to ensure that no steam gets in while its cooking or it will turn wet and lumpy , so seal well and a few times over and around with foil .
This is perhaps one of the best steamed desserts I have made .
