Spinach Salad ( Mustard & Sesame Dressing )

Spinach Salad ( Mustard & Sesame Dressing )

Take a bunch of baby spinach , divide into 4-5 smaller bunches which you tie and blanch in water which has 1 teaspoon of sugar . Drain ,and chill the spinach . Don't overcook the spinach .

The Dressing :

1 Tablespoon Tahini paste .
2 Tablespoons strong mustard ( not in powder form )
2-3 Tablespoons Light Soy Sauce
Simmer the paste ingredients in about 150 Ml of water to blend all the ingredients . You should end up with a custard consistency dressing .
Adjust the flavors to your taste . Chill the dressing .

Place the spinach as ( in the photograph ) on a platter , spoon on the dressing . Sprinkle with a bit of freshly lightly roasted sesame seeds .when ready to serve .
Serve chilled .
