Soup - Gazpacho
Serves 6 , serve very chilled .
I Red Pepper , seeded and roughly chopped .
1 Green Pepper , seeded and roughly chopped .
1/2 Cucumber unpeeled and roughly chopped .
1 Onion ( preferably white ) peeled and roughly chopped .
3-4 Cloves Garlic , minced .
1-2 Fresh Red / Green Chillies chopped .
450 Grams red Tomatoes chopped .
Retain a 2" piece each of the peppers and onion for garnish , which you chop into not too tiny pieces . Set aside to use when serving .
Blend the rest of the above ingredients to a thick smooth thick slush .
Now add to the blended soup , 450 Ml tomato juice and 2 tablespoons of Red wine vinegar ( balsamic will do , or else some leftover white wine is even better ! ) and also add two tablespoons of extra Virgin Olive Oil .
Add salt and coarsely ground pepper .
Mix all the ingredients and chill the soup .
When ready to serve , take the chopped peppers / onions and garnish each portion .
It's optional whether you wish to strain the entire soup to get rid of the seeds and bits of skin , I prefer not to as it gives the soup a good nutritious body and adds to the wholesomeness .
You may also serve with crushed ice -which is the perhaps the best way to eat this soup .
