Semolina Multi Grain Bread

Semolina Multi Grain Bread

Oven preheated to 180C , Bake for 45 minutes .

1 1/4 Cup Semolina .
1 Cup Flour .
3/4th Cup Wheat Bran .
1 Cup Curd .
1 Egg lightly beaten
100-120 Ml Water .
2 Tablespoons Olive Oil .
1 Teasspoon Salt.
1 Teaspoon Sugar .
2 Tablespoons Alfalfa Seeds ( optional , or use any other )
1 Teaspoon Soda .
2 Teaspoons Baking Powder .
2 Tablespoons Oats to line the greased 8 X 3 ( or round ) buttered baking dish with and to put on top of the bread if desired .

Knead all the above well ( not oats ) , let it stand for 15 minutes and then knead again . The consistency should be similar to very thick slush , not totally solid .
Pour into your baking dish , set in middle row and bake 45 minutes .
Cool on a wire rack for an hour before cutting .
This is a very moist , flavoursome , healthy and tasty bread .



The best part about this bread is that we don't use any yeast !


Nutrition data :
Semolina is very low in Saturated Fat, Cholesterol and Sodium.
Wheat Bran is low in Saturated Fat, and very low in Cholesterol and Sodium. It is also a good source of Protein, Thiamin, Riboflavin and Potassium, and a very good source of Dietary Fiber, Niacin, Vitamin B6, Iron, Magnesium, Phosphorus, Zinc, Copper, Manganese and Selenium.

  1. Hi - I was introduced to your blog by Aseem and decided to try this bread. Quick questions-
    a. how does one know when the bread is done? very brown?
    b. how much does it rise normally? I accidentally baked it at 180 F for about an hour, before realizing my error and then upped the temp. It tastes delicious but is a little denser than I expected!

    Welcome aboard Sikandalous . Great to hear that you baked this bread and liked the flavor . As this recipe is yeast free , your bread wont rise above 3 inches or so . The consistency of the dough should be similar to very thick slush , not totally solid . That should do the trick .
    Also your oven has to be perfectly caliberated or else you maynot get the best result.
    Bake 5 minutes less - 40 mins , and test with a toothpick , it should come out clean .
    LET YOUR BREAD COOL TOTALLY OM A RACK , to get a lighter result .
    BTW , my fav bread is the potato walnut one

  3. I must add that non yeast breads tend to be a bit denser - they taste even better toasted .
