Another idea for a light vegetarian uncooked meal
Use whatever vegetables you have at hand which you feel would be ' salady ' or buy what you fancy eating .
I used :
Asparagus - Peeled & blanched in boiling water for 10 seconds and then cooled in iced water .
Broccoli - cooked as above .
Snow peas done like the asparagus - strung and blanched .
Some slices of bocconcini ( Baby Mozzarella )
Cherry Tomatoes for color .
A few Prunes , for a sweet touch .
A salsa of seeded tomatoes and lightly diced avocado tossed with the dressing .
The above were dressed with : Fusion Wasabi Dressing
2 Tablespoons each of Sesame Oil / Til oil , light Soy Sauce ,and Mayonnaise .
3 Tablespoons of Balsamic Vinegar .
2 level teaspoons of Wasabi Powder .
Mix the above well , taste and adjust to suit your palette .
Use as much dressing as needed and refrigerate the rest .
Idea is not to kill the flavours of the salad with the dressing - just to tease the taste buds .
