Pasta With Asparagus Sauce 




Pasta of your choice . I used spaghetti , done al dente .

15 Spears of fresh Asparagus . Cut and discard the bottom one inch which are normally hard . Peel the remaining asparagus .



Plunge asparagus into boiling water to which 1 teaspoon of sugar has been added .We add sugar to the water to keep the asparagus ( or any other green vegetable ) green .Within 20 seconds strain the asparagus out of the boiling water and plunge them into ice cold water prevent further cooking .

Remember , total boiling time is 20 seconds ! The reason behind this is to just about soften the asparagus .

Chop
half the asparagus into 3/4th " size pieces to be used later . 


Take 5-7 Cherry tomatoes or 1 large tomato , seeds removed and cut into bits .
1 Green Chili
1-2 tablespoons cream .
Sharp Parmesan cheese grated - use to suit your taste .

The Sauce :

Blend the balance ( not chopped )  asparagus along with one green chili to a smooth paste .

Now in a wok , in a tablespoon of olive oil , lightly cook the cherry tomatoes till they just about loose their firmness - 30 seconds  , add the blended ' asparagus sauce ' , salt . 



When the sauce bubbles stir in the pasta and the chopped asparagus bits . Cook 30 seconds , add cream , mix well but gently ! 


Lastly plate the pasta and sprinkle the grated Parmesan cheese over the pasta , eat at once !

A refreshingly tasty and easy to make dish .
