Fish Baked With Black Beans In Mirin Sauce

Oven set at 170-180C

300 Grams Fillet of Sole or any firm White Fish .

1 1/2 Tablespoons Dried Salted Black Beans.
2 Tablespoons Mirin Sauce .***
2 Tablespoons Light Soy Sauce .
1 Tablespoon Minced Garlic .
1 Tablespoon Sun Dried Tomatoes ( chopped ) or Juice of 1 Lemon .
1 Tablespoon oil .

Mushrooms ( optional )
Take about 100 grams chopped mushrooms , cook over very high heat with some garlic and salt . 2 minutes . set aside for later use .

Clean fish , dry and make light gashes .In a baking dish mix all the above ingredients and rub on both sides of the fish . Cover with foil and let the fish stand 20 minutes . Place in oven . Baked covered for 15 minutes . Remove foil and add the mushrooms . Bake uncovered for 5-7 minutes .
Serve hot on a bed of lettuce , the lettuce goes beautifully with this dish .
